Joe and Pam came to stay with us on Saturday night. They came to Austin for Brooke's 2nd birthday party at Radijazz. Radijazz, in case you haven't heard, is a 2 year-old's idea of heaven. And, they serve Austin's Pizza. I am sure it will be the first of many trips for Mike and I.
We grilled out Saturday night and I made this salad that I read about in the paper a few weeks ago when Kitty Crider, the Statesman food editor, was retiring and listed her favorite recipes. This was good! Very crunchy and sweet.
Cranberry Broccoli Salad
1 1/4 cups fresh or dried cranberries, halved or whole
4 cups broccoli florets or more
4 cups shredded cabbage or more
1 cup coarsely chopped walnuts
1 cup raisins
1 small onion, finely minced
1 cup mayonnaise
1/3 cup sugar
2 Tbsp. cider vinegar
8 slices bacon, cooked and crumbled
In a large bowl, combine cranberries, broccoli, cabbage, walnuts, raisins and onion. Combine remaining ingredients except bacon and pour over cranberry mixture. Toss well. Cover and refrigerate for up to 24 hours. Sprinkle bacon on just before serving. Serves 8-10.
